INGREDIENTS

1. 1 kilogram beets
2. 1 cup shelled walnuts
3. 3 cloves garlic
4. 3 onions, finely chopped
5. 2 or 3 tablespoons vinegar
6. 5 tablespoons cilantro, finely chopped
7. 1 teaspoon coriander seeds, ground
8. 1 teaspoon fenugreek
9. Ground red pepper, to taste
10. Salt

Method:

• Boil the beets; cool, peel, and grate them.
• Grind the walnuts, garlic, and cilantro.
• Add the spices, finely chopped onions, vinegar, and salt and mix all these thoroughly with the grated beets.
