INGREDIENTS
400 grams black-eyed beans
1/2 small onion
2 small carrots
1 egg
Salt and pepper, to taste
Wheat flour
Groundnut or vegetable oil
Method:
Drain the black-eyed beans.
Chop the onion and carrots, and mix in a blender with the black-eyed beans and egg. Add salt and pepper to taste.
Take the mixture out of the blender, and shape into balls. Roll in wheat flour. Then press into flat, round shapes, about 2 centimeters deep.
Shallow-fry in groundnut oil (or vegetable oil) for about 8 to 10 minutes, turning occasionally.
