1 fresh fish, dried, scaled, and soaked for 24 hours in water
Salt and any desired spices, to taste
3/4 cup palm oil
1 onion, chopped
2 tomatoes, chopped
2 gherkins, peeled and chopped in large pieces
8 pieces okra
1 tablespoon wheat flour
1 kilogram sweet potato leaves or pumpkin leaves
Method:
Cut the fish into very thin slices. Add salt and spices to taste and leave them to flavor the fish for half an hour.
Heat 1/2 cup palm oil in a frying pan. Add and simmer onion and tomatoes. Chop fish into small pieces and add to frying pan.
Add gherkins, okra, and the rest of the palm oil. Add water until it covers all ingredients in the pan. Simmer all ingredients, gently heating the mixture.
When mixture has been well cooked, thicken the mix by adding wheat flour mixed with some cold water.
