Chicken in Cumin Sauce

INGREDIENTS

  1. Two onions, finely chopped
  2. One can tomato paste (or tomato sauce)
  3. One large can stewed tomatoes or several fresh tomatoes, chopped
  4. Four cloves of garlic, minced
  5. One teaspoon cumin
  6. Cayenne pepper or red pepper, to taste
  7. Black pepper, to taste
  8. Salt, to taste
  9. One chicken, cut into small pieces

 Method:

  1. In a large stew pot, combine everything except chicken. Stir until all is well mixed.
  2. Bring to a slow boil. Reduce heat and cover. Simmer for about twenty minutes, stirring occasionally.
  3. Add chicken and cover. Simmer for another half hour or more, stirring occasionally, until chicken is thoroughly cooked.
