INGREDIENTS

  1. 1 large red snapper, cleaned and scaled
  2. Salt and pepper
  3. 5 cloves garlic, chopped
  4. 1/2 tablespoon ginger, minced
  5. 1 medium onion, chopped
  6. 3 tablespoons soy sauce
  7. 1 tablespoon lemon or lime juice
  8. 1 tablespoon olive or sunflower oil
  9. 1 or 2 small chilies (optional), chopped
  10. A dollop of tomato paste or ketchup

 

Method:

  1. Slice the fish vertically along both sides to make grooves in which to put the seasonings. Rub salt and pepper along the sides and inside the grooves of the fish.
  2. Blend all remaining ingredients to make a paste. Rub the paste all over the fish and inside the grooves.
  3. Heat the oven to 350°C and bake (or broil if possible) the fish in a foil-lined pan for 10 to 15 minutes on each side depending on the size of the fish, or until the inside of the fish has turned completely white. The outside of the fish should turn dark brown on both sides. (If not, the oven is likely not hot enough.)
  4. Serve with rice, lentils, and tropical salad.
