Ingredients

• 1 pound green beans, cut
• 1 cup salted boiling water
• 4 to 6 slices bacon
• 1 small onion, chopped
• 1 tablespoon flour
• Salt and pepper, to taste
• 1 tablespoon vinegar
• 1/2 teaspoon sugar

Directions

• Briefly cook the green beans in the salted boiling water. Drain the beans but save the liquid.
• Sauté the bacon until it's almost entirely cooked. Add the onion and sauté it until it's soft. Use 1 tablespoon bacon fat with the flour and cook it until it's lightly browned. Slowly add up to 1 cup of the bean cooking water.
• Cook until smooth, seasoning to taste with the salt and pepper. Add the vinegar and sugar and serve this sauce over the beans.
