Lait Caillé avec Fruit (Homemade Frozen Yogurt with Fruit)

INGREDIENTS

  1. 1 liter whole milk
  2. 4 ounces unflavored yogurt
  3. 1/4 cup sugar
  4. banana, vanilla, or ginger flavoring
  5. 1 cup fresh papaya
  6. 1 cup fresh pineapple
  7. 3 ripe bananas
  8. 1 cup ripe mango

 

Method:

  1. Pour milk into a saucepan and heat slowly over low heat, stirring constantly, until just before boiling point. Let milk cool until lukewarm.
  2. Stir milk and yogurt together and place in an airtight container. Wrap the container in a blanket or towel and leave overnight (or 8 hours) in a warm place.
  3. In the morning, shake the container vigorously (make sure it's closed tightly first). Open the container and stir in the sugar and flavoring.
  4. Pour the lait caillé into small plastic bags, tie the bags off, and put in the freezer for 6 hours or more.
  5. Slice fresh fruit into a bowl and serve with the lait caillé. You can open the bags and put the lait caillé into the bowls with the fruit, but in Gabon, people bite the corner off a bag and eat the lait caillé straight from it.
