Mint Vegetable Rice Pulav

INGREDIENTS

  1. 2 Cup Rice (Basmati)
  2. 4 Cup of water
  3. 8 to 10 Strings of green beans
  4. ½ Cup of green peas
  5. 2 Carrots
  6. 1 Small potatoes
  7. 4 to 5 Cauliflower flowerets           
  8. Salt for taste

MASALA PASTE

  1. 1 Bunch of mint leaves
  2. 1 Bunch of cilantro leaves
  3. 1 Onion (If you don’t want to add onion you can add 1 cup of fresh coconut)
  4. 6 to 8 Green chilies
  5. 2 tsp of poppy seeds
  6. 3 Cloves
  7. 1 Inch cinnamon stick
  8. 3 Cloves of garlic
  9. 1 Inch of ginger

SEASONING

  1. 2 Tbsp of oil
  2. 2 Tbsp of ghee
  3. 2 Cloves
  4. 1 Inch of cinnamon stick
  5. 1 tsp of cumin seeds
  6. 3 Bay leaves

Method:

  1. Grind smooth paste of masala ingredients and keep it aside.
  2. Wash the rice and drain the water and soak the rice for 30 minutes.
  3. Heat the pan with ghee and oil and add the seasoning ingredients and fry for 1 minute then add the masala paste fry until the raw smell goes away, add vegetables and fry for 1 minute last add rice and fry another 1 minute then add water and cook the rice until its done.
  4. Serve hot mint pulav with cucumber raitha.
