INGREDIENTS

1. 6 water chestnuts
2. 2 scallions
3. 1 tablespoon sherry
4. 3 cups chicken stock
5. 6 ounces diced cooked chicken
6. Salt and pepperMethod:

1. Slice the water chestnuts and scallions finely. Add to saucepan with chicken stock, chicken, water chestnuts, and scallions. Bring to a boil. Cover and simmer for 15 minutes.
2. Add the sherry, and season to taste.
