INGREDIENTS

  1. 221 grams mutton
  2. 150 grams rice
  3. 50 grams butter, melted
  4. 50 grams onions, finely shredded
  5. 150 grams coriander
  6. Spinach, to taste
  7. Sorrel, to taste
  8. 1/10 gram citric acid
  9. 1/10 gram saffron
  10. 1/10 gram pepper
  11. Salt

 

Method:

  1. Cut mutton into 35-to-40 gram pieces. Add salt and pepper. Brown meat.
  2. Add citric acid, shredded onions, coriander, spinach, and sorrel. Cook on medium-low heat until ready. Cook rice separately. Color rice with saffron after rice is thoroughly cooked.
  3. Serve mutton and vegetable mixture on top of bed of rice. Pour remaining melted butter over plate.
