Ingredients

• 500 grams rice (washed and drained)
• 3 and 3/4 cups water
• 3 dried Chinese mushrooms, soaked overnight and chopped
• 125 grams dried salted fish, coarsely chopped
• 1 tablespoon ginger, peeled and grated
• 1 spring onion, chopped
• 2 eggs, beaten
• 4 tablespoons oil
• Salt to taste

Method

• Cook rice in water until most of the water is absorbed.
• Add mushrooms, fish, and ginger. Cook over very low heat until fragrant.
• Mix the spring onion with the eggs. Stir into the rice, mixing well. Add salt to taste.
• Serve warm.
