INGREDIENTS

  1. 1 cup peanut butter
  2. 2 cups water
  3. 4 chili peppers (minced)
  4. 1/2 a small onion (minced)
  5. 2 cups tomatoes (peeled and diced)
  6. 1 pound chopped meat (beef, chicken, or fish)
  7. 2 tablespoons oil
  8. salt to taste 

Method:

  1. Heat oil over medium-high heat in a large pot.
  2. Add the onions and sauté till translucent.
  3. Add peppers and sauté 1–2 more minutes.
  4. Add the meat and sauté till lightly cooked.
  5. Stir in the tomatoes, bring to a boil, then reduce heat. Allow to simmer 10–15 minutes.
  6. Add a little water, simmer another 10 minutes.
  7. Stir in the peanut butter and simmer another 20 minutes or so till oil rises to the surface of the dish.
  8. Add seasoning and serve with rice or couscous.
