INGREDIENTS

  1. 1 pound flour made of millet, sorghum, or corn
  2. 8 cups water 

Method:

  1. In a large pot over high heat, bring water to boil.
  2. Slowly add 1/4 pound flour to the water and cook for about 5 minutes, stirring constantly to avoid lumps.
  3. Reduce heat. Remove 1/4 of the mixture and set aside.
  4. Add remaining flour slowly, about a cup at a time. If mixture becomes too thick to stir before all flour is mixed in, add some of the water that has been set aside.
  5. When all the flour is added, it should be a thick, smooth paste that is too thick to stir.
  6. Cover the pot and cook for 10 minutes on very low heat.
  7. Remove from heat and serve with a sauce or stew.
