Tofu and Vegetables with Lower-Fat Thai Peanut Sauce

INGREDIENTS

  1. 1 pound tofu, cut into 1-inch cubes
  2. 1 tablespoon soy sauce
  3. 1 tablespoon oyster sauce
  4. 1 teaspoon sesame oil
  5. 1 teaspoon sugar
  6. 4 tablespoons vegetable oil
  7. 1/2 teaspoon salt
  8. 2 cups green beans, cut into 1-inch lengths
  9. 1/2 cup water chestnuts
  10. 1/2 cup sliced mushrooms

Method:

  1. Combine tofu, soy sauce, oyster sauce, sesame oil, and sugar. Refrigerate for at least 1 hour.
  2. Heat 2 tablespoons vegetable oil in a wok or high-sided frying pan. Add salt, green beans, water chestnuts, and mushrooms. Cook, stirring constantly, for about 2 minutes. Pour into a bowl.
  3. Add 2 tablespoons vegetable oil to the same wok. Add tofu mixture, and stir constantly for about 5 minutes. Return green bean mixture to the wok, and mix thoroughly.
  4. Serve with cooked rice.
