  1. 2 cups black-eyed beans
  2. 1 large pepper
  3. 1 small onion
  4. 1 egg (optional)
  5. 1 pint cooking oil (groundnut oil or palm oil)
  6. Salt to taste 


  1. Soak the beans for about 2 hours and remove the skins.
  2. Grind the beans into a smooth paste.
  3. Chop the onion and pepper finely and blend into the bean mixture. Beat for about 5 minutes.
  4. Add salt. Beat thoroughly for about 5 minutes.
  5. If desired, add beaten egg to make the mixture light.
  6. Heat the cooking oil and fry tablespoonfuls of the mixture until golden brown.
  7. Drain on absorbent paper. Serve hot or cold.
