Date-filled Semolina Cookies - Magrud


For filling:

  • 1 pound dates, ground into paste
  • 1 teaspoon cinnamon
  • 3 teaspoons oil


For dough:

  • 3 cups flour
  • 1 cup oil
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 1/2 cups warm water


For topping:

  • 1/2 cup sesame seeds
  • 2 cups sugar syrup



For filling:

  • Mix all ingredients together.
  • Take a half of the mixture and roll it into a thin log.

For dough:

  • Mix flour and baking powder in a bowl.
  • Add oil and mix well.
  • Roll a spoonful of the resulting dough into a ball. If it crumbles, add a more oil.
  • Divide dough in half and set half aside.
  • Form dough into thick, flattened log. Press groove down middle of log. Place filling in groove. Roll dough around filling.
  • Cut dough in inch-wide pieces.
  • Bake in pre-heated oven at 375 degrees until golden brown.
  • Dip in sugar syrup and garnish with sesame seeds.
