  • 1 eggplant
  • 1 ounce oil
  • 1 ounce milk, coconut or dairy
  • 2 teaspoons curry powder
  • 1 teaspoon red pepper powder
  • Salt, to taste
  • 1 pinch sugar
  • 2 teaspoons vinegar or lime juice
  • 1 onion, sliced


    • Wash eggplant and cut into small pieces. Add oil to frying pan and heat to boiling point. Add eggplant and onion and fry until a light brown color.
    • Allow to drain on paper towel to remove excess oil. Add the fried eggplant, milk, curry powder, red pepper, salt, sugar, and vinegar to a pot and cook for 3 minutes.
