Gbegiri (Black-Eyed Bean Soup)


  1. 2 cups black-eyed beans, soaked and cooked
  2. 1 tablespoon oil
  3. 1 onion, finely chopped
  4. 1 tablespoon tomato paste
  5. 1 can tomatoes, chopped
  6. 2 cups soup stock
  7. Salt and pepper 


  1. Heat the oil in a pan and sauté onion lightly.
  2. Meanwhile, partially mash beans with a fork or potato masher.
  3. Add tomato paste, tomatoes, stock, beans, and salt and pepper to the onion, stirring well. Let simmer for 30 minutes before serving.
