  1. 8 medium bananas
  2. 1/4 cup sugar
  3. 1 teaspoon cinnamon
  4. 1 cup orange juice
  5. 3 tablespoons curaçao or apricot brandy
  6. 4 tablespoons shredded coconut or chopped peanuts
  7. Sour cream
  8. Brown sugar 


  1. Cut the bananas in half, lengthwise and then crosswise.
  2. Blend sugar and cinnamon and dip the bananas in this mixture until coated.
  3. Place the 4 quarters cut-side down, side by side, in a 9-inch round or square ovenproof dish.
  4. Blend the orange juice with the curaçao or apricot brandy. Pour this juice over the bananas.
  5. Sprinkle shredded coconut or chopped peanuts over the top.
  6. Serve piping hot directly from a baking dish.
  7. Use sour cream sweetened by brown sugar as garnish.
