  1. 2 cups rice
  2. 1 pound fresh spinach, washed, trimmed, and finely chopped
  3. 1 onion, finely chopped
  4. 2 tomatoes, stemmed and quartered
  5. 1 cup cooked chicken, ham, or lamb, cut to taste
  6. 4 1/2 cups water
  7. 1/2 teaspoon ground red pepper
  8. Salt
  9. Pepper 


  1. In Dutch oven or large saucepan, mix rice, spinach, onion, tomatoes, meat, and water. Bring to a boil over high heat, stir, and reduce heat to simmer.
  2. Cover and cook for about 30 minutes, or until rice is tender. Add 1/2 teaspoon red pepper, and add salt and pepper to taste. Stir well.
